Sadayana is not just a coffee, but a symbol of cooperation and community. The name “Sadayana” comes from Sundanese, one of the three largest ethnic groups on the island of Java, Indonesia. The region where the Sadayana washing station is located is predominantly inhabited by Sundanese, thus providing a deep cultural context and a rich tradition in coffee cultivation.

Sadayana washing station:
About 200 farmers deliver their hand-picked, ripe, red coffee cherries to the Sadayana washing station. The cherries are washed in a mechanical siphon upon receipt to weed out inferior fruit. The cherries are then placed in special Ecotact bags and sealed to create an anaerobic environment. In this environment, the cherries ferment for 120 hours before being crushed. The resulting parchment and remaining mucilage are placed on raised beds to dry and are raked regularly to ensure even drying. This drying process takes about 10 to 14 days.
Anaerobics:
Farmers hand pick ripe red cherries and deliver them to the Sadayana washing station. Upon collection, the cherry is flooded in a mechanical siphon. The cherries are then placed in Ecotact bags and sealed to create an anaerobic environment. The cherry ferments for 120 hours before being
